Durum wheat cleaning process: Omas machinery and technology

 

The first phase of the durum wheat processing plant is cleaning, which aims to remove impurities such as stones, foreign seeds, fragments, dust, and damaged kernels. Omas Industries utilizes a complete range of machinery, including debranners and scourers for the mechanical removal of surface impurities, as well as separators and vertical aspirators to sort based on weight and size. Moisture meters prepare the product for the subsequent phases, while destoners separate any mineral particles.

A distinctive element of the Omas cleaning system is the wheat sterilizer, which guarantees the complete sanitation of the durum wheat, eliminating bacterial loads, molds, and unwanted microorganisms without altering the characteristics of the kernel. In addition, the optical grain sorter automatically removes visual impurities and defective kernels using color and shape recognition technology, significantly increasing the quality and purity of the final product.

Durum wheat milling: quality semolina production with Omas plants

 

The second phase is milling, the process of transforming the kernel into semolina by opening and separating the endosperm. Omas Industries employs high-performance roller mills, such as the Leonardo Edge, for the progressive reduction of the kernel, the plansifter for product classification and sieving, dedicated semolina purifiers for durum wheat, and the vibrating bran finisher for final refinement.

Durum milling is more complex than soft wheat milling: the hard, vitreous kernel requires a slower and more controlled sequence of crushing to obtain semolina with the optimal particle size. The goal is to produce semolina with uniform particles, typically between 300 and 600, µm, which is essential for guaranteeing yield and water absorption in pasta production.

Thanks to the modularity of its plants, Omas allows the miller to adapt the grinding diagram based on the quality of the raw durum wheat and the final product desired.

Durum wheat storage and handling: integrated Omas solutions

 

Following cleaning and milling, the product must be managed efficiently during unloading, internal transport, and storage operations. Omas Industries offers double-bucket scales or tubular scales for weight control, Svevo extractors for internal material handling, and a wide range of chain conveyors, grain augers, and vertical bucket elevators that ensure a continuous and secure flow between the various sections of the durum wheat processing plant.

Although durum wheat is more resistant to breakage, it requires strict control of humidity and temperature to avoid spoilage or infestations. Omas integrates automatic environmental control, ventilation, and aeration systems into its silos, guaranteeing optimal preservation conditions for the grain.

The final stage of the process is the packaging of the finished product, which may be semola, semolina, durolina, or selected kernels. Omas Industries designs complete wheat packing machines, precision dosage systems, and automated bagging stations equipped with palletizing and weight control systems.

The packaging of semolina requires attention to preserving its typical amber color, controlling moisture, and ensuring the absence of impurities. Precision in dosing and sealing guarantees the maximum quality and shelf life of the packaged product.
